Easy Fish-Cakes
Ingredients
- MAIN MIXTURE:
- 3 Cans Tuna or salmon (133 gram size, small can)
- 3 Tbsp. All purpose flour
- Parmesan cheese – heaping ⅓ cup
- Mayonnaise – generous ¼ cup
- Minced onion – heaping 3 tbsp
- Minced garlic – 2½ tsp
- Dried parsley – ¾ tsp
- Dried dill – ½ tsp
- Lemon juice – 2½ tsp
- Lemon pepper - 1 tsp
- Eggs - 2
- Black pepper – ¼ tsp
- COATING:
- 3/4 cup Panko crumbs
Instructions
- Drain canned fish very well.
- Mix main ingredients in a bowl until well combined.
- Form into 5 patties (140 grams each)
- Coat with Panko for crunch
- Pan fry in oil over medium heat, ~10 min per side until golden and heated through
- NOTE: I also pop them in the oven at 350F for about 15 minutes to make sure they are cooked through properly

Crunchy on the outside, moist and tasty on the inside (not as bland as some fish cake recipes!
