Chicken Enchiladas

Ingredients
- FILLING:
- Meat from 1 Costco rotisserie chicken, shredded or minced
- 1 can refried beans
- 1–2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- ***
- CHICKEN SEASONING:
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried oregano
- ½ tsp black pepper
- ½ tsp smoked paprika (optional)
- ¼ tsp chipotle chili powder (optional)
- Salt to-taste
- [OR just use your favourite taco seasoning!]
- ***
- SAUCE & ASSEMBLY
- 1 large can enchilada sauce for assembling
- 8–12 tortillas
- Additional shredded cheese for topping
Instructions
- Preheat oven to 350°F .
- In a large pot, combine the shredded chicken with the seasoning spices.
- Add ½ cup water and heat until the chicken is heated-through and seasoning is fully incorporated.
- Taste before adding salt.
- In a small saucepan, heat up the refried beans.
- In another pot, heat up the enchilada sauce.
- Spread a thin layer of enchilada sauce in the bottom of your casserole dish.
- Dip each tortilla in the enchilada sauce before filling, just to wet it.
- Fill each tortilla with seasoned chicken, refried beans, and a sprinkle of cheese.
- Roll and place seam-side down in the baking dish.
- Cover the enchiladas with the remaining enchilada sauce and top with some shredded cheese.
- Bake for 20 - 30 minutes, or until hot and bubbly and the cheese is melted.,
